Banana Blonds

Ingredients

  • 1/2 c. margarine
  • 1 c. light brown sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. mashed bananas
  • 1 c. coconut flakes
  • 1 1/4 c. flour
  • 1 Tbsp. sugar
  • 1 Tbsp. butter
  • 3/4 c. chopped nuts (optional)

Instructions

  1. Cream together margarine, brown sugar, egg and vanilla extract. Add baking powder and salt.
  2. Mix well, then add mashed bananas and 3/4 cup coconut.
  3. Blend in flour.
  4. Pour into greased 13 x 9 x 2-inch pan.
  5. Mix remainder of coconut with 1 tablespoon of butter and sugar (melted) and spoon evenly over the top.
  6. Bake in oven at 325° for 45 minutes.
  7. Cool.
  8. Cut into bars.
