Ingredients

  • 3/4 c. flour
  • 1/2 c. whole wheat flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 1 1/2 c. bran cereal
  • 3/4 c. milk
  • 1 c. mashed bananas
  • 1 egg
  • 1/4 c. vegetable oil

Instructions

  1. Preheat oven to 400°.
  2. In a small bowl, combine the flours, sugar, and baking powder.
  3. In a large bowl, mix the bran cereal, milk, and mashed bananas.
  4. Let stand for 1 to 2 minutes.
  5. Add the egg and vegetable oil to the cereal mixture and beat well with a spoon.
  6. Stir in the flour mixture until just combined.
  7. Spoon the batter into greased muffin tins or use paper liners.
  8. Bake for about 12 minutes.
