Ingredients

  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup chopped walnuts
  • 3 cups crushed ripe bananas
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt

Instructions

  1. Beat vegetable oil and sugar until the mixture is smooth.
  2. Beat in eggs until the mixture is smooth.
  3. Add baking soda and salt.
  4. Mix well.
  5. Add flour a little at a time and mix well.
  6. Mix in crushed bananas and add walnuts.
  7. Pour the batter into an oiled and floured loaf pan.
  8. Bake at 325°F for 45 minutes or until a knife or straw inserted into the center comes out clean.
