Ingredients

  • 1 1/4 cups cornmeal
  • 1/4 cup wheat germ
  • 1/4 cup potato flour
  • 1/2 cup soy flour
  • 2 eggs
  • 1/2 cup mashed banana
  • 1 tablespoon yeast
  • 2 tablespoons warm water

Instructions

  1. Place cornmeal, wheat germ, potato flour, soy flour, and softened yeast in a bowl.
  2. In another bowl, beat the eggs and all other ingredients including mashed banana and honey.
  3. Add the dry ingredients to the moist mixture and mix well.
  4. Pour the batter into a prepared 9 x 5 x 2-inch bread pan.
  5. Let the dough rise for about 1 hour.
  6. Bake in a 325°F oven for 40 to 50 minutes.
