Ingredients

  • 1/2 cup light brown sugar, packed
  • 3 tablespoons granulated sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon allspice
  • 3 ripe bananas
  • 3/4 cup coarsely chopped pecans

Instructions

  1. Beat the light brown sugar, granulated sugar, and vegetable oil until blended.
  2. Add the eggs and beat until smooth.
  3. Sift together the all-purpose flour, baking powder, salt, baking soda, and allspice.
  4. Add the dry ingredients to the sugar mixture, beating until combined.
  5. Fold in the mashed bananas and chopped pecans.
  6. Pour the batter into a greased 9 x 5-inch loaf pan.
  7. Bake in a preheated 350°F oven until set, about 1 hour.
  8. Cool briefly in the pan, then transfer to a rack to cool completely.
