Ingredients

  • 1 3/4 cups flour
  • 2/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup margarine
  • 2 1/2 cups mashed bananas
  • 2 eggs
  • 1 1/2 to 2 cups chopped walnuts

Instructions

  1. In a large bowl, mix flour, sugar, baking powder, salt, and baking soda.
  2. Cut in margarine using a pastry blender until mixture resembles coarse crumbs.
  3. With a fork, stir in mashed bananas and eggs until well combined.
  4. Stir in chopped walnuts.
  5. Spread batter in a greased and floured 9 x 5-inch loaf pan.
  6. Bake at 350°F (175°C) for 55 to 60 minutes.
  7. Cool in the pan on a wire rack for 10 minutes.
  8. Remove from pan and cool completely on the rack.
