Ingredients

  • corn oil
  • 2 lb potatoes, peeled and thinly sliced
  • 1 yellow onion, thinly sliced
  • 1/4 c butter, cut into small pieces
  • salt

Instructions

  1. Fold two 24-inch long sheets of heavy-duty foil in half and place one sheet crosswise over the other.
  2. Generously coat the foil with corn oil.
  3. Combine the sliced potatoes and onion in the center of the foil.
  4. Add small pieces of butter to the mixture and season with salt and freshly ground pepper.
  5. Close the foil tightly to form a large bag.
  6. Grill or cook until the potatoes are tender, about 30 minutes.
