Ingredients

  • 1 1/2 lb. cubed chuck roast or stew beef
  • 5 medium potatoes, cut into cubes
  • 33 baby carrots
  • 1 medium chopped onion
  • 1 can diced tomatoes
  • 4 cups water or enough to cover ingredients
  • 4 beef bouillon cubes
  • 1/2 teaspoon sugar or substitute
  • 1/4 teaspoon salt or to taste

Instructions

  1. Brown the cubed chuck roast or stew meat in a Dutch oven or skillet.
  2. Place the browned meat in a crock-pot or large Dutch kettle.
  3. Add the chopped onion, potatoes, baby carrots, and diced tomatoes.
  4. Pour in water or cover all ingredients and add beef bouillon cubes.
  5. Add sugar and salt to taste.
  6. Cook in a crock-pot overnight or in a Dutch kettle for about 3 hours until vegetables and meat are tender.
