Ingredients

  • 1/2 c. butter (no substitute)
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 egg, beaten
  • 1/2 tsp. vanilla
  • 1/2 c. coconut (unsweetened, if possible)
  • 1 c. oats
  • 1/2 c. Rice Krispies
  • 1 c. all-purpose flour
  • 1/2 tsp. each: baking powder, soda and salt

Instructions

  1. Mix the flour, baking powder, soda and salt.
  2. Cream butter and sugars; add beaten egg and vanilla.
  3. Add flour mixture, then oats, coconut and lastly the Rice Krispies.
  4. Drop by scant teaspoonful on cookie sheet.
  5. Flatten each with fingers or "heel" of palm. Bake at 350° for 12 to 15 minutes until nicely browned.
  6. Remove quickly from baking sheet to cooling rack with spatula.
