Ingredients

  • 2 Tbsp oil
  • 1 egg
  • 1 1/3 cups buttermilk
  • 1/2 stick butter or margarine
  • 1 1/2 cups plain cornmeal
  • 1 1/4 tsp salt
  • 1/2 tsp soda

Instructions

  1. Preheat the oven to 425°F (220°C). Melt butter or margarine in a skillet in the oven.
  2. In a bowl, combine the egg, oil, and buttermilk, and mix well.
  3. In a separate bowl, mix the dry ingredients: cornmeal, salt, and soda.
  4. Add the dry ingredients to the egg, oil, and buttermilk mixture and stir until just combined.
  5. Pour the batter into the melted butter in the skillet.
  6. Bake in the preheated oven for 25 minutes, or until golden brown and cooked through.
