Ingredients

  • 1 lb Game-bird livers or possibly meat grnd
  • 1 lb Fresh pork fat grnd
  • 1 lb Lean boar or possibly pork grnd
  • 1 lb Antelope or possibly veal grnd
  • 1 c. Chopped onion
  • 1/2 c. Madeira, sherry, or possibly port (or possibly 1/4 c. Cognac)
  • 3 x Large eggs
  • 1/4 tsp Grnd ginger
  • 1/4 tsp Grnd cloves
  • 1/4 tsp Grated nutmeg
  • 1 Tbsp. Salt
  • 1/2 tsp Freshly-grnd white pepper (scant tspn)
  • 3 x or possibly more Garlic cloves

Instructions

  1. Cook onion in Madeira till onion is soft and liquid has evaporated.
  2. Mix with grnd meats and remaining ingredients.
  3. Mix well.
  4. This recipe yields about 6 c..
