Ingredients

  • 2/3 cup whole wheat flour
  • 1/3 cup all-purpose flour
  • 1/4 cup oat or other flour
  • 2 tablespoons wheat germ
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup skim milk
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. In a medium bowl, mix together the dry ingredients: whole wheat flour, all-purpose flour, oat or other flour, wheat germ, sugar, salt, and baking soda.
  2. In a second bowl, combine all wet ingredients: buttermilk, skim milk, eggs, vegetable oil, and vanilla extract, whisking to beat eggs lightly.
  3. Add the wet ingredients to the dry ingredients, stirring just to combine. Let the batter stand for about 10 minutes.
  4. Heat a griddle over medium heat and lightly grease it if not nonstick.
  5. Pour batter onto the griddle to form individual pancakes.
  6. Cook until the bottoms are golden brown and the tops bubble.
  7. Flip the pancakes and cook until the undersides are golden brown.
  8. Serve immediately.
