Ingredients

  • 3 c. cubed cooked potatoes
  • 3 hard-cooked eggs, chopped
  • 1/2 c. chopped celery
  • 1/4 c. chopped onion
  • 1 tsp. salt
  • 6 Tbsp. chopped sweet pickles
  • 1 tsp. pepper
  • 2/3 c. mayo
  • 1 Tbsp. yellow mustard

Instructions

  1. In a large mixing bowl, combine the cooked potatoes, chopped eggs, chopped celery, chopped onion, chopped sweet pickles, salt, and pepper.
  2. Add the mayonnaise and yellow mustard to the mixture.
  3. Gently mix all ingredients until well combined.
  4. Chill the potato salad in the refrigerator for at least 3 hours before serving.
