Basil Parmesan Quick Bread

Ingredients

  • 3 c. unsifted flour
  • 1 Tbsp. plus 1 tsp. baking powder
  • 1 tsp. salt
  • 1 c. grated Parmesan cheese
  • 1 Tbsp. minced fresh basil
  • 2 eggs
  • 1 1/3 c. milk
  • 1/4 c. melted butter

Instructions

  1. Preheat oven to 350°.
  2. Grease a 9 x 5 x 3-inch loaf pan. Combine flour, baking powder, salt, Parmesan and basil in mixing bowl.
  3. Form a well in the center and add eggs, milk and butter. Mix just until moistened (batter will be lumpy).
  4. Spread into pan and bake 50 minutes or until toothpick inserted in center comes out dry.
  5. Cool before slicing.
