Ingredients

  • 4 skinless bass fillets
  • salt and pepper to taste
  • 4 Tbsp. milk
  • 1/4 c. all-purpose flour
  • 1/3 c. peanut oil or vegetable oil
  • 6 Tbsp. unsalted butter
  • 1 Tbsp. garlic, chopped
  • juice of 1 lemon
  • 4 lemon slices
  • 3 Tbsp. fresh parsley, chopped

Instructions

  1. Sprinkle the bass fillets with salt and pepper.
  2. Pour the milk into a shallow dish.
  3. Dip each fish fillet into the milk, then roll in the flour to coat.
  4. Shake off excess flour from the fish.
  5. Heat peanut or vegetable oil in a skillet over medium heat.
  6. Fry the coated fillets until golden brown and cooked through, about 3-4 minutes per side.
  7. Remove the fish and set aside.
  8. In the same skillet, melt the butter over medium heat.
  9. Add chopped garlic and cook until fragrant, about 30 seconds.
  10. Squeeze lemon juice into the skillet and stir.
  11. Add lemon slices and cook for another minute.
  12. Return the fish to the skillet to coat with the sauce.
  13. Garnish with chopped parsley before serving.
