Ingredients

  • 2 cans minced clams
  • 1 cup diced celery
  • 3/4 cup butter
  • 1 quart half and half
  • 1 1/2 teaspoon pepper
  • 1 cup chopped onion
  • 2 cups chopped potatoes
  • 3/4 cup flour
  • 1 1/2 teaspoon salt

Instructions

  1. Drain juice from the canned minced clams and pour it over the vegetables; add enough water to barely cover and simmer, covered, until potatoes are tender, approximately 20 minutes.
  2. Melt the butter in a saucepan; add the flour and blend well.
  3. Cook for 1 to 2 minutes, then add the half and half and cook, stirring, until the mixture is smooth and thickened.
  4. Add the undrained vegetables and clams back into the soup; heat through.
  5. Season with salt, pepper, and sugar to taste.
