Ingredients

  • 1 c. self-rising flour
  • 1 stick softened margarine or butter
  • 1 c. chopped pecans
  • 2 pkg. sugar free pudding mix (any flavor)
  • 4 c. milk
  • 24 pkg. Equal
  • 8 oz. softened cream cheese

Instructions

  1. Mix the self-rising flour, softened margarine or butter, and chopped pecans.
  2. Press the mixture into a 13 x 9-inch pan to form the crust.
  3. Bake at 425°F (220°C) for 10 minutes, then let it cool.
  4. Prepare the sugar-free pudding mix as directed on the package; set aside.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Add the milk and continue to mix until well combined.
  7. Mix in the sugar substitute (Equal) until fully incorporated.
  8. Spread the cream cheese mixture over the cooled crust.
  9. Top with the prepared pudding mixture.
  10. Chill the dessert for at least 2 hours before serving.
  11. Optionally, top with Cool Whip and additional chopped pecans before serving.
