Ingredients

  • leftover pinto or Northern beans
  • 2 eggs
  • 1 large onion
  • 1/2 cup flour

Instructions

  1. Combine leftover pinto or Northern beans, eggs, finely chopped onion, and flour in a large mixing bowl.
  2. Mix well using a spoon until ingredients are thoroughly combined.
  3. In a large skillet, add oil and heat over medium heat.
  4. When the oil is hot, reduce heat to medium-low.
  5. Drop spoonfuls of the bean mixture into hot oil to form cakes.
  6. Fry the cakes until golden brown on both sides, about 3-4 minutes per side.
