Ingredients

  • 1 (9-inch) vegetable shortening deep dish pie crust
  • 2 Tbsp. margarine
  • 2 Tbsp. buttermilk
  • 1 c. sugar
  • 1 Tbsp. flour
  • 1 Tbsp. cinnamon
  • 1 egg
  • 4 egg whites
  • 1 (15 oz.) can navy or Great Northern beans
  • 1 c. evaporated skim milk

Instructions

  1. Preheat oven to 425°F.
  2. If crust is frozen, set it out to thaw while making filling.
  3. In a mixing bowl, beat together margarine, buttermilk, and sugar.
  4. Add flour and cinnamon; blend well.
  5. Add egg and egg whites and beat well.
  6. Rinse, drain, and mash beans.
  7. Add beans, milk, and vanilla to the flour mixture; beat well.
  8. Spoon filling into the thawed crust.
  9. Place pie on a baking sheet and bake for 5 minutes.
  10. Lower temperature to 325°F and bake an additional 45 to 50 minutes, until a knife inserted into the center comes out clean.
