Ingredients

  • 1 cup dried navy beans
  • 1 (1 lb. 4 oz.) can tomatoes
  • 1 carrot, cubed
  • 1 beef bouillon cube
  • 1/4 teaspoon pepper
  • 1 tablespoon shortening
  • 3 quarts water
  • 1 cup diced celery
  • 1 potato, cubed
  • 1 tablespoon salt
  • 1/2 pound ground beef

Instructions

  1. Wash the navy beans.
  2. Add the beans to 3 quarts of water, bring to a boil, boil for 2 minutes, then remove from heat and let soak for 1 hour.
  3. Simmer the soaked beans for 20 minutes.
  4. Add tomatoes, diced celery, cubed carrot, cubed potato, salt, pepper, and the beef bouillon cube to the beans.
  5. Brown the ground beef in shortening.
  6. Bring the soup to a boil.
  7. Add the browned ground beef to the soup.
  8. Cover and simmer for 1 hour.
