Bean Stuffed Peppers

Colorful bell peppers stuffed with a savory bean and cheese mixture, sweet raisins, and spicy salsa, perfect for a hearty vegetarian main or flavorful side dish.

Ingredients

  • 4 medium bell peppers
  • 15 oz. kidney beans, drained
  • 8 oz. shredded Monterey Jack cheese
  • 1/4 cup raisins
  • 1/4 cup salsa
  • 2 tsp. chili powder

Instructions

  1. Cut the stem from each bell pepper, remove seeds, and cut a small slit in the bottom of each pepper.
  2. In a bowl, combine drained kidney beans, shredded Monterey Jack cheese, raisins, salsa, and chili powder.
  3. Stuff each pepper with the bean mixture.
  4. Place the stuffed peppers in an ovenproof dish.
  5. Bake at 350°F (175°C) for 35 to 45 minutes or until peppers are soft and cheese has melted.
