Ingredients

  • 1 1/2 to 2 lb. smoked sausage, sliced into bite-sized pieces
  • 1 (15 oz.) can tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 (1 1/2 lb.) cans Ranch Style pinto beans
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 1 cup chopped green pepper
  • Red pepper to taste

Instructions

  1. Saute chopped celery, chopped onion, and chopped green pepper in a small amount of cooking oil or butter.
  2. Add the sautéed vegetables to the remaining ingredients: sliced smoked sausage, canned tomatoes, tomato sauce, Ranch Style pinto beans, and red pepper to taste.
  3. Stir until well blended.
  4. Simmer until the mixture reaches desired consistency, then serve over cooked rice.
