Ingredients

  • 1 bag lima beans
  • 1 bag black-eyed peas
  • 1 bag red kidney beans
  • 1 bag pinto beans
  • 1 bag split peas
  • 1 bag black peas
  • 1 bag lentils
  • 1 chopped onion
  • salt
  • pepper
  • 2 cubes chicken bouillon cubes

Instructions

  1. Mix all beans and peas in a jar for storage.
  2. Put a scoop of mixed peas and beans in a large pan of water and soak for an hour or overnight.
  3. Rinse the soaked beans and peas, then add more water, chopped onion, salt, pepper, and bouillon cubes.
  4. Cook the beans and peas slowly on the stove top or in a crock-pot until tender.
  5. In another pan, boil a cup of rice until cooked.
  6. Mix the cooked rice with the cooked beans and peas.
  7. Serve and enjoy this hearty, budget-friendly meal.
