Ingredients

  • 1 bear shoulder or rump
  • salt to taste
  • pepper to taste
  • flour
  • 3 Tbsp bacon drippings
  • 1 stalk celery
  • 1 onion
  • 1 cup canned tomatoes
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1/4 tsp allspice

Instructions

  1. Cover the bear meat with salt, pepper, and flour.
  2. In a Dutch oven or roasting pan, brown the meat in bacon drippings.
  3. Add chopped celery, chopped onion, canned tomatoes, bay leaf, thyme, allspice, and sliced carrot.
  4. Cover and simmer for 4 and a half hours or until tender, turning the meat every hour.
