Ingredients

  • 1 large onion
  • 2 cloves garlic
  • 1 1/2 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 tsp. thyme
  • salt
  • pepper
  • 16 oz. whole tomatoes
  • 3 Tbsp. bread crumbs
  • 1 tsp. dried marjoram
  • 1 1/2 lb. potatoes
  • 1 Tbsp. chopped parsley

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Oil a 2-quart casserole dish.
  3. Chop the onion and garlic.
  4. Cook the onion in oil until translucent, about 1 minute.
  5. Add garlic and cook for another minute.
  6. Crumble the ground beef into the pan and cook until browned.
  7. Add salt, pepper, thyme, and dried marjoram; cook until flavors meld.
  8. Peel and thinly slice the potatoes.
  9. Drain the tomatoes and chop them.
  10. Add the chopped tomatoes and bread crumbs to the beef mixture.
  11. Arrange half of the sliced potatoes on the bottom of the casserole, overlapping halfway up the sides.
  12. Pack the beef mixture into the casserole over the potatoes.
  13. Cover with the remaining sliced potatoes.
  14. Bake in the oven until browned, approximately 30 to 35 minutes.
