Instructions

  1. Wash the opossum inside and out and salt it.
  2. Heat lard in a roasting pan.
  3. Stir-fry minced garlic, small onions, and ginger in the lard.
  4. Heat until the mixture starts to smoke.
  5. Shake flour over the opossum and brown it in the lard for two minutes.
  6. Place the opossum in the roasting pan with its paws crossed over its chest.
  7. Add carrots, onions, potatoes, and celery to the pan.
  8. Pour in beef broth and cooking sherry.
  9. Cook at 325°F (160°C) for 2 hours.
  10. Add fresh peas to the pan.
  11. Recover and heat for 8 more minutes.
  12. Serve with rice, turnip greens, and cornbread.
