Ingredients

  • 4 Tbsp Wesson oil
  • 1 c diced onion
  • 1 lb beef filet
  • 2 tsp salt
  • 1 Tbsp curry powder
  • 1 c beer
  • 1/4 c grated coconut
  • 1/4 c sliced almonds
  • 1/2 c chopped apples
  • 1/2 lb carrots
  • 4 potatoes

Instructions

  1. Heat a Dutch oven or large cooking pot with lid; add oil.
  2. Brown diced onion in the oil, then remove and set aside.
  3. In the same pot, add beef filets and cook until browned.
  4. Add salt and curry powder to the beef and stir well.
  5. Pour in beer and bring to a simmer.
  6. Add carrots, potatoes, and chopped apples to the pot.
  7. Cover and cook until vegetables are tender, about 30 minutes.
  8. Stir in grated coconut and sliced almonds before serving.
