A hearty Indian-inspired curry featuring ground beef or lamb, rich spices, tomatoes, and vegetables, served with rice and Fritos for a flavorful and satisfying meal.

Ingredients

  • 2 lb ground beef or mixed beef and lamb
  • 2 medium onions
  • 1 Tbsp curry powder
  • 1 tsp chili powder
  • 1 (No. 2) can tomatoes
  • 1 small can string beans
  • diced potatoes
  • 2 cups rice
  • 1 bag Fritos

Instructions

  1. Fry onions, curry powder, and chili powder in enough fat to brown.
  2. Add salted meat and press flat in the frying pan; brown on both sides.
  3. Chop the meat into small pieces and add to tomatoes, string beans, and diced potatoes.
  4. Cook for 10 minutes.
  5. Bring salted rice to a boil and cook for 15 minutes.
  6. Serve the curry on plates with sauce on top, accompanied by Fritos.
