Beef Casserole Stew
Ingredients
- 2 1/2 to 3 lb. beef chuck, cut into 2-inch chunks ⓘ
- 1/4 c. flour ⓘ
- 4 medium potatoes, peeled and quartered ⓘ
- 6 medium carrots, cut in 2-inch chunks ⓘ
- 3 ribs celery, cut in 1-inch chunks ⓘ
- 3 medium onions, chopped ⓘ
- 1 c. water ⓘ
- 1/4 c. dry sherry ⓘ
- 1/4 c. soy sauce ⓘ
- 1 or 2 green peppers, chopped ⓘ
- 1/2 tsp. salt
- 1/2 tsp. pepper ⓘ
Instructions
- Layer half of the meat, sprinkled with 1/4 cup flour.
- Add potatoes, carrots, celery and onions.
- Sprinkle remaining flour; repeat layers.
- Mix water, sherry, soy sauce, salt and pepper. Pour over all.
- Cover and bake 2 to 2 1/2 hours at 300°.
- Add green peppers and cook 20 minutes longer.
- Delicious!!
