Ingredients

  • 1 box manicotti
  • 1 lb. ground beef
  • 16 oz. Ricotta cheese
  • 2 c. Mozzarella cheese, shredded
  • 1/2 c. Parmesan cheese, shredded
  • 2 eggs
  • 1 c. crackers
  • 1 can tomato sauce

Instructions

  1. Cook manicotti as directed; drain and place on foil in a single layer.
  2. Cook and drain ground beef.
  3. Mix cooked beef with ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, eggs, crackers, and tomato sauce.
  4. Stuff the cooked manicotti shells with the beef mixture.
  5. Place stuffed pasta in a single layer in a baking dish.
  6. Spoon 1/2 cup tomato sauce over the top of the pasta.
  7. Sprinkle the shredded mozzarella cheese over the sauce.
  8. Cover the dish with aluminum foil.
  9. Bake at 350°F (175°C) for 35 minutes.
  10. Uncover and bake for an additional 10 minutes until cheese is bubbly and golden.
