Ingredients

  • 1 lb ground beef
  • 1 cup small curd cream-style cottage cheese
  • 2 cups shredded Mozzarella cheese
  • 1/2 teaspoon basil
  • 2 medium tomatoes
  • 1 medium zucchini
  • 2 eggs
  • 1/4 teaspoon pepper
  • 1/2 cup chopped onion
  • 1/3 cup Parmesan cheese
  • 1 teaspoon oregano
  • 1 (6 oz) can tomato paste
  • 1 (6 oz) can water
  • garlic powder
  • 1 cup milk
  • 3/4 cup buttermilk baking mix
  • 1 teaspoon salt

Instructions

  1. Cook and crumble ground beef in a skillet.
  2. Add chopped onion and brown.
  3. Grease a 13 x 9-inch casserole dish.
  4. Spread cottage cheese in the bottom of the dish.
  5. Layer with half of the shredded Mozzarella cheese.
  6. Add herbs, tomato paste, water, and chopped tomatoes to the meat mixture and heat.
  7. Spoon the meat mixture over the cheese layer.
  8. Sprinkle with half of the remaining Mozzarella cheese.
  9. Top with thinly sliced zucchini.
