Ingredients

  • 1 lb. ground beef
  • 1 (12 oz.) jar chunky salsa
  • 1 c. frozen sweet corn, thawed
  • 3/4 c. Miracle Whip
  • 1 Tbsp. chili powder
  • 2 c. crushed tortilla chips
  • 2 c. shredded Colby/Monterey Jack cheese

Instructions

  1. Preheat oven to 350°F.
  2. Brown the ground beef in a skillet; drain excess fat.
  3. Transfer cooked beef to a mixing bowl.
  4. Add salsa, chili powder, Miracle Whip, and thawed corn to the beef.
  5. Layer half of the meat mixture in a baking dish.
  6. Top with half of the crushed tortilla chips and half of the shredded cheese.
  7. Repeat layering with the remaining ingredients.
  8. Bake in the preheated oven for about 20 minutes or until cheese is melted and bubbly.
