Ingredients

  • 500 g plain flour
  • 14 g dried active yeast, dissolved in 5 tbsp lukewarm water
  • 5 tbsp olive oil
  • 500 g beef mince
  • 4 tbsp tomato puree
  • 2 x 400 g cans tomatoes, drained, juice reserved, tomatoes roughly chopped
  • 2 cloves garlic, peeled and crushed
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 198 g can sweet corn
  • 1 None small courgette, sliced
  • 2 None onions, peeled and sliced

Instructions

  1. Place the flour in a bowl and make a well in the middle. Add the yeast mixture to the well and stir in a little flour from the edge. Cover and let stand in a warm place for 30 mins.
  2. Add 4 tbsp of the oil, a pinch of salt and 1 1/2-1 2/3 cups lukewarm water and knead until smooth. Form into a ball. Cover and let stand in a warm place for 30 mins.
  3. Heat remaining 1 tbsp oil in a skillet on medium-high heat. Add the ground beef and cook until crumbly. Season with salt and black pepper. Mix the tomato paste and 5 tbsp of the reserved tomato juice in a small bowl. Season with salt and black pepper and stir in the garlic, oregano and basil.
  4. Preheat the oven to 400°F. Grease a 14 x 11 inch baking sheet. Roll out the dough on a floured work surface to the same size as the baking sheet. Place dough on the baking sheet. Spread with the tomato paste mixture. Top with the tomatoes, ground beef, corn, zucchini, onions and cheese. Bake for 25 mins until the cheese is melted.
