- Slice the beef into strips.
- Spread mustard on each beef strip.
- Lay a slice of bacon on top of each strip.
- Cut the dill pickles in half lengthwise and place one half on the bacon.
- Sprinkle 2 teaspoons of diced onions on top.
- Roll up the beef strips and secure with 2 to 3 toothpicks.
- Brown the rolled beef in oil on all sides.
- Place the beef rolls into a roasting pan and add 1 cup of water.
- Cover the pan and cook in a 200°F oven for 4 to 6 hours.
- Thicken the gravy with a little flour, if desired.
- Serve with potatoes or noodles.
