Beef rollettes are tender, flavorful rolls filled with carrots and pickles, lightly browned and simmered in beef broth, perfect for a hearty, savory meal with mashed potatoes.

Ingredients

  • 2 lb. tenderloin
  • mustard
  • sliced carrots
  • sliced Polish dill pickles
  • 1 can College Inn beef broth

Instructions

  1. Slice the tenderloin very thin, about 4 1/2 x 3 inches, using tenderloin or thin sliced sandwich steaks.
  2. Spread mustard evenly on each piece of steak.
  3. Place two pieces of sliced carrots and two slices of Polish dill pickles on top of each steak.
  4. Roll up each steak tightly and fasten with toothpicks to secure.
  5. Lightly brown the rolled beef in a frying pan over medium heat.
  6. Add the can of beef broth to the pan.
  7. Simmer gently until the beef is cooked through and flavors meld.
