Ingredients

  • 1 1/2 lb. stew meat
  • 5 large potatoes, peeled and cut in large chunks
  • 6 large carrots, peeled and cut in bite-sized pieces
  • 1 large onion, chopped
  • 1/2 cup oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 beef bouillon cubes
  • water
  • flour
  • 1 box Bisquick biscuit mix

Instructions

  1. Add salt and pepper to 1 cup of flour.
  2. Toss the stew meat in the seasoned flour until coated.
  3. Heat oil in a large Dutch oven over medium heat.
  4. Add the coated meat and brown on all sides.
  5. Add chopped onion to the meat and sauté for 5 minutes.
  6. Pour water over the mixture and add salt, pepper, and beef bouillon cubes.
  7. Bring to a boil, then reduce heat to low and simmer for 2 1/2 hours until the meat is tender.
  8. Add carrots and cook for 15 minutes.
  9. Add potatoes and cook until tender.
  10. Mix 6 cups of Bisquick biscuit mix with milk as directed to make the dumpling batter.
  11. Drop spoonfuls of the batter onto the simmering stew.
  12. Cook uncovered for 20 minutes until the dumplings are set and done.
  13. Cover and cook for an additional 15 minutes before serving.
