Ingredients

  • 2 lb. large shrimp
  • 1 c. flour
  • salt
  • ground white pepper
  • 1/4 tsp. nutmeg
  • 1 Tbsp. ground coriander
  • 3/4 c. beer
  • 1 Tbsp. vegetable or corn oil

Instructions

  1. Peel and devein the shrimp.
  2. Put the flour in a mixing bowl; add salt, white pepper, nutmeg, and ground coriander.
  3. Gradually add the beer, stirring with a wire whisk until smooth.
  4. Add more beer if necessary to achieve the consistency of pancake batter.
  5. Brush the top of the batter with 1 tablespoon of oil to prevent gas from escaping.
  6. Cover with plastic wrap and let stand in a warm place for 30 minutes.
  7. Beat the egg whites until they form soft peaks.
  8. Fold the egg whites into the batter with a rubber spatula.
  9. Heat the oil in an electric skillet or deep fryer to 350°F.
