Ingredients

  • 1 lb. bay scallops
  • 6 oz. imported baby shrimp
  • 4 Tbsp. sweet butter
  • 4 Tbsp. all-purpose flour
  • 8 oz. bottle clam juice
  • 3/4 c. white wine
  • salt and pepper
  • 3 Tbsp. chopped fresh dill
  • 1 1/2 Tbsp. dried dill
  • 1 Tbsp. fresh lemon juice

Instructions

  1. If bay scallops are not available, use sea scallops and cut them into smaller pieces.
  2. In a large skillet, melt the sweet butter over medium heat.
  3. Add the all-purpose flour and cook, stirring constantly, until lightly browned.
  4. Stir in the clam juice and white wine, bringing the mixture to a simmer.
  5. Season with salt and pepper to taste.
  6. Add the chopped fresh dill (or dried dill) and cook for 2 minutes.
  7. Stir in the lemon juice and whipping cream, cooking until the sauce thickens slightly.
  8. Add the scallops and baby shrimp, cooking until they are just heated through, about 3-5 minutes.
  9. Serve hot, garnished with additional dill if desired.
