Ingredients

  • 1 pkg. lemon jello
  • 1 1/2 c. boiling water
  • 1/2 c. beet juice
  • 1 c. finely chopped beets
  • 1 c. finely chopped celery
  • 1 c. finely chopped green pepper
  • 3 tsp. horseradish
  • 1 c. mayonnaise

Instructions

  1. Mix lemon jello with boiling water until dissolved.
  2. Add beet juice to the mixture and let it cool until it begins to thicken.
  3. Stir in finely chopped beets, celery, green pepper, and horseradish.
  4. Drain 3 teaspoons of horseradish and stir into mayonnaise.
  5. Add mayonnaise mixture to the jello mixture and stir well.
  6. Pour the combined mixture into a mold and refrigerate until set.
