Ingredients

  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 (16 oz.) cans sliced beets, drained and cut into thin strips
  • 1/2 lb. sliced Jarlsberg cheese, cut into thin strips
  • 1 cup walnuts, chopped
  • Green leaf lettuce (for garnish)

Instructions

  1. In a large bowl, whisk together apple cider vinegar and olive oil.
  2. Toss in drained and sliced beets until well coated.
  3. Add sliced Jarlsberg cheese and chopped walnuts; toss gently until just coated.
  4. Line a serving platter with green leaf lettuce.
  5. Serve the beet-cheese mixture on the lettuce.
