Ingredients

  • 2 medium onions
  • 2 large cloves garlic
  • 1 cup mushrooms
  • 2 carrots
  • 1/2 cup olive oil
  • 1/4 cup butter
  • 1/4 cup soy sauce
  • 2 small tomatoes
  • 1 bunch scallions
  • 1 small jar pimientos
  • 2 cups rice
  • basil to taste
  • parsley to taste
  • oregano to taste
  • pepper to taste

Instructions

  1. Finely chop onions, garlic, mushrooms, and carrots, then sauté in butter and olive oil.
  2. Set aside the sautéed vegetables.
  3. Add spices and soy sauce to the skillet and cook briefly.
  4. Cook rice according to package directions.
  5. Chop tomatoes and scallions finely.
  6. Rinse, drain, and chop pimientos finely.
  7. Combine cooked rice with sautéed vegetables, chopped tomatoes, scallions, and pimientos.
  8. Mix well and serve.
