Veggie Melts are flavorful open-faced pita sandwiches topped with fresh vegetables, cheese, and optional sprouts, perfect for a quick, nutritious, and customizable meal.

Ingredients

  • 1 Tbsp sunflower oil
  • 1 small onion, chopped
  • 1/2 tsp basil
  • 3 cups chopped broccoli
  • 4 pita bread
  • sour cream
  • 3 cups fresh spinach leaves
  • 2 cups sliced mushrooms
  • Colby or Cheddar cheese, sliced thin
  • 1 large tomato, sliced
  • alfalfa sprouts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Set a 10-inch frying pan over medium heat. Add sunflower oil, then cook chopped onion and basil until fragrant, a few minutes.
  3. Add chopped broccoli to the pan and cook until tender. Remove from heat.
  4. Lay out pita bread on a baking sheet.
  5. Spread sour cream evenly over each pita.
  6. Top with sliced tomatoes.
  7. Spread about 1/2 cup of cooked broccoli over the tomatoes.
  8. Add spinach leaves and sliced mushrooms on top of the broccoli.
  9. Optional: add alfalfa sprouts.
  10. Place slices of cheese on top and bake until vegetables are hot and cheese is melted, about 5 to 7 minutes.
