Veggie Melts are flavorful open-faced pita sandwiches topped with fresh vegetables, cheese, and optional sprouts, perfect for a quick, nutritious, and customizable meal.

Instructions
- Preheat the oven to 350°F (175°C).
- Set a 10-inch frying pan over medium heat. Add sunflower oil, then cook chopped onion and basil until fragrant, a few minutes.
- Add chopped broccoli to the pan and cook until tender. Remove from heat.
- Lay out pita bread on a baking sheet.
- Spread sour cream evenly over each pita.
- Top with sliced tomatoes.
- Spread about 1/2 cup of cooked broccoli over the tomatoes.
- Add spinach leaves and sliced mushrooms on top of the broccoli.
- Optional: add alfalfa sprouts.
- Place slices of cheese on top and bake until vegetables are hot and cheese is melted, about 5 to 7 minutes.
