Beet Gelatin Salad

Ingredients

  • 1 package lemon Jello
  • 1 cup boiling water
  • 1 cup sliced beets
  • 1 cup beet juice
  • 3 Tbsp vinegar
  • 2 Tbsp horseradish sauce
  • 1/2 tsp salt

Instructions

  1. Dissolve the lemon Jello in 1 cup of boiling water.
  2. Pour off the beet juice from the beets and save 1 cup. Combine with water if necessary to make 1 cup of liquid.
  3. Mix the beet juice with the dissolved gelatin.
  4. Place a layer of sliced beets in the bottom of a mold.
  5. Pour some of the gelatin mixture over the beets to cover them.
  6. Let the gelatin set in the refrigerator.
  7. Add another layer of sliced beets on top of the set gelatin.
  8. Pour more gelatin mixture over the new beet layer, ensuring beets don't float to the top.
  9. Repeat layering with beets and gelatin until the mold is filled.
  10. Allow the entire salad to set completely in the refrigerator.
  11. Serve chilled, optionally garnished with mayonnaise and crumbled blue cheese.
