Beet Gelatin Salad

Instructions
- Dissolve the lemon Jello in 1 cup of boiling water.
- Pour off the beet juice from the beets and save 1 cup. Combine with water if necessary to make 1 cup of liquid.
- Mix the beet juice with the dissolved gelatin.
- Place a layer of sliced beets in the bottom of a mold.
- Pour some of the gelatin mixture over the beets to cover them.
- Let the gelatin set in the refrigerator.
- Add another layer of sliced beets on top of the set gelatin.
- Pour more gelatin mixture over the new beet layer, ensuring beets don't float to the top.
- Repeat layering with beets and gelatin until the mold is filled.
- Allow the entire salad to set completely in the refrigerator.
- Serve chilled, optionally garnished with mayonnaise and crumbled blue cheese.
