Beet Nut Salad

A vibrant and tangy salad combining sweet beets, pineapple, crunchy nuts, and a refreshing raspberry Jell-O base, perfect for light gatherings and colorful side dishes.

Ingredients

  • 15 oz. can diced beets
  • 3 Tbsp. lemon juice
  • 1 Tbsp. sugar
  • 1/8 c. vinegar
  • 1/2 c. chopped nuts
  • 8 oz. can crushed pineapple
  • 1/4 c. water
  • 1 pkg. raspberry Jell-O

Instructions

  1. Drain the liquid from the beets and pineapple into a cooking pot.
  2. Add water, lemon juice, vinegar, and sugar to the pot and heat until the sugar dissolves.
  3. Dissolve the raspberry Jell-O into the hot liquid mixture.
  4. Add the diced beets and crushed pineapple to the mixture and stir gently.
  5. Pour the mixture into a mold or serving dish.
  6. Sprinkle chopped nuts on top of the salad.
  7. Chill in the refrigerator until set and ready to serve.
