Ingredients

  • 6 fresh beets
  • 1 cup olive oil
  • 1/4 cup vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 to 4 whole cloves
  • 1/4 cup thinly sliced onions
  • 6 cups water

Instructions

  1. Heat water, 1 tablespoon vinegar, and 1 teaspoon salt to boiling.
  2. Add beets to the boiling water.
  3. Cover and cook for 30 minutes or until beets are tender.
  4. Drain the beets and let them cool slightly.
  5. Cut the beets into slices.
  6. Mix olive oil, 1/4 cup vinegar, sugar, 1/2 teaspoon salt, cloves, and sliced onions to make the marinade.
  7. Pour the marinade over the sliced beets and marinate overnight.
