Ingredients

  • 2 lb. asparagus spears, cleaned and trimmed
  • 3 tsp. wine vinegar
  • 1/2 cup olive oil
  • 1 tsp. parsley flakes
  • 1/4 tsp. garlic powder
  • 6 hard-boiled eggs, chopped
  • 6 Tbsp. bacon bits

Instructions

  1. Steam asparagus until tender-crisp; drain.
  2. Make dressing with olive oil, wine vinegar, garlic powder, parsley flakes, salt, and pepper.
  3. While asparagus is hot, layer half the spears in a deep dish.
  4. Sprinkle half the chopped eggs and bacon bits over the asparagus and half the dressing.
  5. Make a second layer of asparagus spears.
  6. Top with remaining chopped eggs, bacon bits, and dressing.
  7. Serve at room temperature or chill.
