Ingredients

  • 6 slices bacon
  • 1 cup chopped onion
  • 4 cups peeled and cubed potatoes
  • 2 cups water
  • 1 tsp salt
  • 2 (10 3/4 oz) cans condensed cream of mushroom soup
  • 2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese

Instructions

  1. In a large saucepan or Dutch oven, fry the bacon until crisp. Remove bacon from pan, crumble and set aside.
  2. Add chopped onion to the bacon fat and sauté until browned, about 5 minutes.
  3. Add peeled and cubed potatoes (or thawed hash browns) and water to the pan.
  4. Cover the pan with a lid and cook for 15 minutes, until the potatoes are tender.
  5. Stir in salt, condensed cream of mushroom soup, and milk.
  6. Heat through, but do not bring to a boil.
  7. Ladle the soup into bowls and top each with 1/4 cup shredded cheddar cheese and some crumbled bacon.
