Ingredients

  • 6 to 8 cups sliced okra
  • 2 large onions, chopped
  • 2 large bell peppers, chopped
  • 2 large tomatoes, chopped
  • 1 can tomato paste
  • 1/2 pound smoked sausage
  • 1/2 pound bacon
  • 1/2 pound ham
  • 1 1/2 pounds lean ground pork or beef
  • 3 to 4 cups cooked rice

Instructions

  1. Cook okra in oil until the slime is out.
  2. Saute onions, bell peppers, and tomatoes.
  3. Cut sausage, bacon, and ham into small pieces and cook partially.
  4. Drain on paper towels to remove excess fat.
  5. Cook ground pork or beef until no pink remains.
  6. Combine all ingredients and cook for an additional 45 minutes on medium to low heat.
  7. Add cooked rice to desired consistency and season with salt and pepper to taste.
