Ingredients

  • 1 1/4 cup vegetable oil
  • 2 cup sugar
  • 4 eggs
  • 2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3 cup grated carrots
  • 1 pound powdered sugar
  • 8 ounce cream cheese
  • 1 stick butter
  • 2 teaspoon vanilla
  • 1/4 cup evaporated milk

Instructions

  1. Combine eggs, sugar, and vegetable oil in a mixing bowl and mix well.
  2. In a separate bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, salt, and ground nutmeg.
  3. Gradually beat the dry ingredients into the egg mixture until smooth.
  4. Stir in the grated carrots.
  5. Pour the batter evenly into two 9-inch round baking pans.
  6. Bake in a preheated 350°F (175°C) oven for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes for 10 minutes in the pans, then remove and transfer to a wire rack to cool completely.
  8. Prepare the cream cheese frosting by mixing softened cream cheese, butter, vanilla, powdered sugar, and evaporated milk until smooth.
  9. Once the cakes are cooled, spread the frosting between the layers and over the top and sides.
