Best Carrot Cake

Ingredients
- 1 1/4 cup vegetable oil ⓘ

- 1 teaspoon baking soda ⓘ
- 1 teaspoon baking powder ⓘ

- 3 cup grated carrots ⓘ
- 1 pound powdered sugar ⓘ
- 8 ounce cream cheese ⓘ
- 1 stick butter ⓘ
- 2 teaspoon vanilla ⓘ
- 1/4 cup evaporated milk ⓘ
Instructions
- Combine eggs, sugar, and vegetable oil in a mixing bowl and mix well.
- In a separate bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, salt, and ground nutmeg.
- Gradually beat the dry ingredients into the egg mixture until smooth.
- Stir in the grated carrots.
- Pour the batter evenly into two 9-inch round baking pans.
- Bake in a preheated 350°F (175°C) oven for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cakes for 10 minutes in the pans, then remove and transfer to a wire rack to cool completely.
- Prepare the cream cheese frosting by mixing softened cream cheese, butter, vanilla, powdered sugar, and evaporated milk until smooth.
- Once the cakes are cooled, spread the frosting between the layers and over the top and sides.
