Ingredients

  • 1 cup chopped onion
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 2 pounds ground beef
  • 1 or 2 (15 oz.) cans kidney beans
  • 2 (16 oz.) cans cut-up tomatoes
  • 1 large can tomato paste
  • 1 to 2 cloves garlic, minced
  • 1 to 2 tablespoons chili powder (optional)
  • 1 teaspoon salt

Instructions

  1. Saute chopped onion, green peppers, and chopped celery until tender.
  2. Add ground beef and cook until browned.
  3. Drain excess fat and add kidney beans.
  4. Stir in cut-up tomatoes and tomato paste.
  5. Add minced garlic, salt, and chili powder if using.
  6. Cover and simmer for 1 to 1 1/2 hours, stirring occasionally.
  7. Adjust consistency by stirring in reserved liquid if desired.
